Over Ons
Restaurant Tijdok: delicious fish cuisine. Since 2008, the restaurant has been run by the Pauwaert family, so you could say it's a family affair. Mother Nicole, hostess and assisted by her son Marino, handles the front of house service, and daughter Marianne is the chef in the kitchen. Their lifelong knowledge and experience in the fishing industry has inspired the family to establish a genuine fish restaurant at Tijdok, the former fishing port where the historic heart of Zeebrugge's fishing industry lies. It goes without saying that here you can taste the sea as we've always known it, full of delicacies often forgotten by the modern influence of other continents. Why eat scampi when we have our shrimp, "the gold of the North Sea"? What could be better than our North Sea crab? No king crab for us, then... In short, you should definitely come and try it. Tijdok is located on the old fishing estate and is also the ideal starting point for a lovely walk or bike ride along the harbor.
"Always stood among the fishermen"
"Both my great-grandfathers, my grandfather, and my father were fishermen and shipowners; I've never known anything else. As children, my brother and I would go out on the boat to fish for shrimp." "As a child, I always wanted to be a chef. After high school, I went to Ostend for culinary school, but I worked for shipping companies for a long time. At 35, I finally decided to pursue my dream and started my restaurant here, at the Tijdok, where all the shrimp fishermen used to be moored." "I work exclusively with fish landed by Flemish fishermen. We don't use fish from other continents. We are known for our daily fresh, home-peeled shrimp. What's on the menu at Tijdok follows the rhythm of the fishing industry." "If you respect yourself as a fish chef, you have to work with the seasons. The delicious, pure taste of fresh fish from our North Sea, a garden full of delicacies." Excerpt from the article "De Kust" (2014) by chef Marianne Pauwaert
